PFI Field Day: Juan O’Sullivan’s Secrets to Successful Salsa

Get an inside look at Juan O’Sullivan’s Gourmet Salsa Co. and Chile Gardens. Sean Sullivan and John Whitson will lead a tour and discussion of chile pepper gardens, best chile pepper horticulture practices, chile pepper varieties, irrigation design and produce marketing, followed by a chile pepper roaster demonstration. Sean and Becki will answer questions regarding Juan’s Commercial Kitchen, where they manufacture their salsa and sauces. Juan’s is currently working under a Value-Added Producers grant through the USDA. You will learn how they prepare their value-added products for sale in retail stores. Juan’s will provide smoked pork sandwiches, chips and salsa, sauces and beverages.
